You can use a client version with a differnt Sametime Server version, although this is not recommended because of possible feature mismatch.

Sametime 7.5 is currently in beta, which has restricted access. To get hold of the Sametime 7.5 client as soon as possible it's probably best to speak to your local IBM sales office.
